Since I learnt that the Seto Inland Sea region produce very good quality of domestic unwaxed lemon in Japan, I bought some and made bottles of preserved lemon for my dishes.First bottle was made in late January …and add second in Feb… now I have five bottles in my fridge!
Will share some of my simple recipe that I try ; )
Unwaxed Lemon (depends on the size of the bottle) – Cut one lemon into 6-8 pcs
Natural Salt – 10% weight of above lemon
Spice – Bay Leaf, Cinnamon Stick, Coriander Seed, Dried Chili
