Japanese Agar “Kanten” & Kumquat “Kinkan”
Visited Farmer’s Market and found some beautiful Kumquat. And made “Kumquat Simple Syrup” and enjoyed with Japanese Agar.
Cooked with brown sugar, cinnamon, clove, coriander seed. bay leaf and enjoy with English tea, dessert like the image.
Japanese Agar is made by seaweed and the texture is a really amazing. (much harder texture than gelatin)
This agar is used for Japanese cuisine and various for Japanese confectionaries too.
