Assorted Umami Set!


In Japan, people enjoy steamed white rice with various foods. Pickled vegetables and Umeboshi (pickled plum) are typical things but there are so many varieties like the picture …They are used dried kelp, dried bonito, shrimp, little sardines… and known as ingredients which contains umami flavor. My favorite one is kelp cooked with lovely dashi(soup stock of kelp, bonito etc..), shoyu, mirin (sweet wine). Dried kelp is originally very hard when it’s dried but it becomes very soft and gives great umami flavor. Usually the taste is a little salty but just nice when we enjoy it with steamed rice. It’s good for salad and bento etc…
