Deep-fried Fish Cake, Gansu

Made open sandwiches using deep fried fish cake (surimi) called Gansu in the Seto Inland Sea region. I heard it’s a traditional and regional meal there.

The lemon is from Osaki Kamijima Island and pickled in rice vinegar and sugar. It adds refreshing flavor for deep fried food.
